The perfect starter to a dinner party with loved ones, or just an indulgent weekend meal with drinks, these beautiful garlic crumbed mussels are beautiful with a glass of wine.
1.Combine breadcrumbs, garlic, lemon rind and parsley in small bowl. Scrub mussels, remove beards.
2.Bring the water to a boil in large saucepan, add mussels. Boil, covered, about 7 minutes or until mussels open. (Discard any that do not.)
3.Preheat grill.
4.Fully open shells, discard tops. Loosen mussels from shells with a spoon, replace in shells. Place shells, in single layer, on large baking tray. Sprinkle with breadcrumb mixture, drizzle with oil. Cook under grill about 3 minutes or until browned.
